Pesto Zoodles Recipe with Avocado

a delicious low carb, clean eating pasta dish

Ingredients

Scale
  • 2 medium/large zucchinis
  • 2 tablespoon olive oil (EVOO)/3 tablespoon water
  • 3 cloves garlic, minced
  • 2 avocados, cut, sliced, peeled and pit
  • 1 tablespoon lemon juice
  • 2 tomatoes in cubes
  • 1/2 teaspoon salt/or 1/2 tablespoon miso
  • some pepper
  • some fresh basil leaves, hacked
  • some basil leaves
  • 1 tablespoon almonds, hacked (or hazelnuts)

Instructions

Prepare Zoodles

  1. spiralize 2 zucchinis to zoodles using a spiral vegetable slicer (e.g. Lurch Spiralizer)

Prepare Avocado Pesto

  1. heat water/olive oil in a pan
  2. add garlic
  3. let it simmer for 3 minutes – in the meanwhile…
  4. place avocado halves in a food processor
  5. add lemon juice
  6. add salt and pepper
  7. process for a few seconds
  8. add sautéed garlic
  9. process again for a few seconds

Cook Zoodles

  1. bring salt water to a boil
  2. add zoodles
  3. let it simmer for 1-2 minutes
  4. drain zoodles
  5. toss zoodles gently in a bowl together with pesto
  6. add tomato cubes
  7. add almonds
  8. mix everything gently together
  9. serve in pasta plates
  10. garnish with basil leaves
  11. Enjoy immediately!

Notes

  • For 2 portions I recommend to use a bit larger zucchinis.
