Parmesan Roasted Carrots

A delicious and easy side dish

Ingredients

Scale
  • 810 (organic) carrots, (wash and scrub them well to remove dirt and any debris)
  • 4 tablespoons Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper, more to taste
  • Chopped parsley, optional

Instructions

  1. Preheat the oven to 400 degrees F/200 °C.
  2. Pat carrots dry using a paper towel and place them in a large bowl.
  3. Add olive oil, Parmesan cheese and garlic and toss gently to coat.
  4. Season with salt and pepper.
  5. Arrange the carrots on a baking sheet lined with parchment paper.
  6. Roast for 15 minutes, then turn carrots around.
  7. Roast for another 10 minutes or until the cheese is slightly browned.
  8. Serve immediately.

Notes

  • Eat it as a healthy snack or combine it with e.g. steamed spinach to a skinny clean eating lunch or dinner.
