Vegan green pea soup recipe

A flavorful and simple legume soup


  • 3 medium potatoes in cubes
  • 1 onion in small cubes
  • 300 gr. fresh shelled or frozen green peas
  • 1 teaspoon Turmeric
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 100 gr. (soy) cream or 2 tbsp ground cashews
  • 750 ml vegetable broth
  • 1 bay leaf (optional)
  • some parsley for garnish


  1. Put potatoes, and onions with the vegetable broth in a large pot or Thermomix.
  2. Bring it to a boil, reduce heat and let it simmer for 15 minutes, stirring occasionally (for Thermomix use Varoma speed 1, 20 minutes)
  3. Add peas and let it simmer for an additional 5 minutes.
  4. Add (soy) cream or ground cashews, turmeric, salt, and pepper.
  5. Puree the soup in your food processor or with your blender until you get a smooth consistency.
  6. Garnish with some cream (optional) and parsley.
  7. Enjoy!


  • Serve it with whole grain bread.
  • for a variation, you could sautée an onion carrot cubes mix in a bit of olive oil before adding all other veggies and broth.
