Vegan green pea soup recipe
A flavorful and simple legume soup

Ingredients

- 3 medium potatoes in cubes
- 1 onion in small cubes
- 300 gr. fresh shelled or frozen green peas
- 1 teaspoon Turmeric
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 100 gr. (soy) cream or 2 tbsp ground cashews
- 750 ml vegetable broth
- 1 bay leaf (optional)
- some parsley for garnish
Instructions
- Put potatoes, and onions with the vegetable broth in a large pot or Thermomix.
- Bring it to a boil, reduce heat and let it simmer for 15 minutes, stirring occasionally (for Thermomix use Varoma speed 1, 20 minutes)
- Add peas and let it simmer for an additional 5 minutes.
- Add (soy) cream or ground cashews, turmeric, salt, and pepper.
- Puree the soup in your food processor or with your blender until you get a smooth consistency.
- Garnish with some cream (optional) and parsley.
- Enjoy!
Notes
- Serve it with whole grain bread.
- for a variation, you could sautée an onion carrot cubes mix in a bit of olive oil before adding all other veggies and broth.
