cilantro lime rice recipe with avocado

A delicious plant-based dish


  • 4 cups cooked (brown) rice (2 cups uncooked, ca. 400 gr./14 oz. )
  • 2 medium ripe avocados, peeled and cored
  • 1 cup chopped cilantro
  • 2 tbsp fresh, organic lime juice
  • 1 tsp of lime zest (optional)
  • 1/4 tsp ground cumin
  • 1 clove garlic, minced
  • 3/4 tsp salt or 6 tsp of white miso
  • freshly ground pepper to taste


  1. In a blender, combine avocados, cilantro, lime juice, lime zest, garlic, cumin, and miso.
  2. Blend until smooth.
  3. Taste with freshly ground pepper
  4. Add avocado mixture to grains and stir well with a fork


Use it as the main dish with a salad as a starter, or combine it with tomato salsa.
