Baked sweet potato toast with peanut butter and bananas

A delicious clean eating snack or breakfast


  • 1 large sweet potato (or 2 medium)
  • 1 tbsp peanut butter
  • 12 banana(s) in slices


  1. Line a sheet pan with parchment paper.
  2. Preheat oven to 375 F°/190 C°
  3. Rinse and scrub sweet potatoes.
  4. On a cutting board cut lengthwise into 1/4-inch/0.6 mm thick slices.
  5. Place potato slices on lined sheet pan.
  6. Pop in oven and bake for 20 minutes.
  7. Remove from oven and turn around.
  8. Return to oven and bake another 15 minutes.
  9. Remove from heat.
  10. Divide peanut butter evenly.
  11. Sprinkle with banana slices.
  12. Enjoy!


  • For variation you could try it also with chia seed jam, cream cheese or another favorite spread.
