Spiralized Carrots with Cottage Cheese

Spiralized carrots with cottage cheese using the Lurch Spiralizer for the first time


  • 400 g carrots (23 carrots, medium size)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 200 g cottage cheese
  • fresh herbs (chives, parsley)


  1. Spiralize your washed carrots (if you don’t own a spiralizer you could use a potato peeler/grater instead and grate carrot stripes)
  2. Combine carrots with olive oil + lemon juice dressing
  3. Mix cottage cheese with small cuts of chives
  4. Arrange carrots on plate
  5. Top with cottage cheese
  6. Garnish with parsley and carrot stalk (remains after spiralizing)


  • This makes also a great, light dinner on days when you went overboard for lunch;)
