Kale pesto recipe with whole grain pasta

Ingredients

Scale
  • 1 cup (curly) kale
  • 1 cup basil (or 1 tablespoon dried basil)
  • 1/4 cup parsley
  • 1/4 cup pine nuts
  • 1/4 cup almonds
  • 1/2 cup olive oil (EVOO)
  • 2 garlic cloves
  • juice of 1 lemon
  • 1/2 teaspoon sea salt
  • some chili flakes

Instructions

  1. Put all ingredients in a food processor.
  2. Pulse until it reaches desired consistency.
  3. Simply fold into cooked wholemeal noodles or spaghetti.
  4. Serve with oven-roasted kale leaves. (optional)

Notes

  • It’s also a great plant based sandwich spread.
