Clean Eating hazelnut macaroons

Delicious, vegan macaroons

Ingredients

  • 12 tablespoons chickpea water/aquafaba
    (Make sure to use BPA-free cans!)
  • dash salt
  • 200 gr. ground hazelnuts
  • 140 gr. coconut sugar

Instructions

  1. Preheat the oven to 175 degrees Celsius/ 350 degrees Fahrenheit.
  2. Line two baking sheets with baking paper.
  3. Beat the chickpea water/egg whites until stiff peaks form. ( I let my Thermomix beat the chickpea water for 8 minutes)
  4. Slowly add the coconut sugar and continue beating until the mixture is stiff again.
  5. Carefully fold in the ground hazelnuts.
  6. Spoon about 26 macaroons on the baking sheets using two teaspoons to make small heaps.
  7. Press down gently a whole hazelnut in the center of each cookie.
  8. Bake for 20 minutes.

Notes

  • Let it sit for 10 minutes on the baking tray before removing.
